Cantaloupe and Red Onion Salad

  • 1 Cantaloupe- as fresh as possible -chilled and chopped into 1 /1/2 inch cubes (this should be about 6 cups

  • 1/2 red onion sliced thinly

  • 1/4 cup black olives chopped

  • 1 jalapeno pepper stemmed, seeded and chopped

  • 1/2 cup lemon juice

  • 1/2 tsp salt

  • 4 - 5 tablespoons chopped fresh parsley

  • 4 -5 tablespoons chopped fresh mint

  • 1 tsp honey

Combine all ingredients. Chill for 1/2 hour to blend the flavours. Enjoy!
