I am inspired by how hard Shelley works to make Red Damsel a truly viable farm enterprise. This recipe is in honour of the delicious produce I saw at her stand today

 

Red Damsel Spring Quiche

Ingredients:

1 - 9 inch pastry shell

6 strips of your favouite bacon (Omit for vegetarian)

1/2 cup of Red Damsel baby bok choi or pak choi

1/4 cup of spring onions or chives

1/2 cup diced zucchini

1/4 cup of diced garlic scapes

!/2 cup chopped snap peas

Chopped fresh oregano, and chives

3 Fresh Red Damsel eggs

1 cup fresh milk

1/2 cup cream

1 cup feta cheese

1 tsp Kosher salt

Method:

Pre heat oven to 350 deg F

Dice bacon and saute until crisp and fat rendered. If omitting bacon heat 2 tbsp olive oil to saute vegetables

Remove bacon and set asid.e. Saute next 5 ingredients in bacon fat or olive oil until tender. Turn heat off and add bacon bits back in.

Whisk eggs, milk, cream, chopped herbs and Kosher salt. Add sauteed veggies and feta cheese.

Blind bake pastry shell on a cookie sheet with foil and pie weights (dried beans are great pie weights) for 15 minutes. Remove from oven, remove foil and put egg vegetable and cheese mixture crust. Bake for another approximately 40 minutes until edges are set and center is just a bit jiggly. Cool for at least 20 minutes. Serve with some fresh pea greens on the side.
